Light chicken broth with rice noodles and herbs.

Ingredients

  • 8 oz rice noodlesYou don't have this in your pantry
  • 1 large onionYou don't have this in your pantry
  • 2 inches gingerYou don't have this in your pantry
  • 3 pods star aniseYou don't have this in your pantry
  • 1 stick cinnamonYou don't have this in your pantry
  • 3 tbsp fish sauceYou don't have this in your pantry
  • 3 stalks scallionYou don't have this in your pantry
  • 0.25 cup cilantroYou don't have this in your pantry

Instructions
1. Char onion and ginger; simmer with chicken, star anise, and cinnamon to make broth; skim. 2. Remove chicken when done; shred; season broth with fish sauce and salt. 3. Soak/cook rice noodles per package; drain. 4. Assemble bowls with noodles, shredded chicken, and hot broth. 5. Top with scallions and cilantro; serve with lime and chili.
