Light chicken broth with rice noodles and herbs.
Ingredients
- 2 lb chicken
- 8 oz rice noodles
- 1 large onion
- 2 inches ginger
- 3 pods star anise
- 1 stick cinnamon
- 3 tbsp fish sauce
- 3 stalks scallion
- 0.25 cup cilantro

Instructions
1. Char onion and ginger; simmer with chicken, star anise, and cinnamon to make broth; skim.
2. Remove chicken when done; shred; season broth with fish sauce and salt.
3. Soak/cook rice noodles per package; drain.
4. Assemble bowls with noodles, shredded chicken, and hot broth.
5. Top with scallions and cilantro; serve with lime and chili.
