Eggs poached in spicy tomato-pepper sauce.
Ingredients
- 4 eggs egg
- 2 cups crushed tomatoes
- 1 medium bell pepper
- 0.5 medium onion
- 3 cloves garlic
- 1 tsp paprika
- 1 tsp cumin
- 2 tbsp olive oil
or add items individually:
Instructions
1. Sauté onion and bell pepper in olive oil until soft; add garlic.
2. Stir in paprika and cumin; cook briefly.
3. Add crushed tomatoes; simmer 10 minutes to thicken; season.
4. Make wells; crack eggs into wells.
5. Cover and cook until whites set and yolks are still runny.
6. Serve with herbs and crusty bread if desired.
